Peanut Butter Balls Recipe

MMMMM This might be my favorite time of year just because of all the baking and I'm super excited to share some of my favorites :)

Here is one of them....

1 cup Crunchy Peanut Butter

1 cup Icing Sugar

1/4 cup Margarine/Butter, your preferrance

2 cups Rice Krispies

1 1/2 cups Molding Chocolate

2 TBSP Vegetable Shortening

24 mini muffin cups

Directions-----

1. Mix peanut butter, margarine and icing sugar very well together. Add rice krispies and mix well. Portion mixture with a well rounded teaspoon. Shape into balls and place into a muffin cup and refridgerate for 20 mins.

2. Melt chocolate and shortening in a small saucepan. Spoon 1 teaspoon of melted chocolate over top of peanut butter ball. Refridgerate until chocolatehas hardened and keep in an air tight dish in the refridgerator.

Chicken Stew Recipe

Chicken Stew This is my famous chicken stew! It is a favorite in my household and I can’t keep enough of it in the house!
This I choose to make in the crock 1pot…

1-2 cans of chicken broth (low sodium/fat free)

1-3 cans of water (to your desired taste)

3 boneless, skinless chicken breasts

2 celery stalks (chopped into small pieces)

2 carrots (chopped into small pieces)

1/2 an onion, chopped

2 medium sized potatoes, cut into cubes

1 1/2 cups egg noodles

1 tbsp parsley flakes

 

First i start off with pouring one can of chicken broth (fat free or low sodium) into my crock pot and also add a can of water. Place 3 skinless, boneless chicken breasts in the pot and put the cover on. Set on high and let cook for about 2 hours.

After the chicken is throughly cooked, take it out and place it on a cutting board and cut into smaller bite sized pieces. Place back in the pot and cut celery, carrots and onions into small pieces. Add to pot and continue to cook. You can switch your crock pot to low now! If you find you don’t have enough broth you can either add another can & water or a boullion cube with water. I don’t add potato to mine all the time but this is a choice I will leave up to you. If you choose to then cut potato into cubes and add to the stew. 

I also put noodles in mine but then again that is another choice I am going to leave up to you…I choose egg noodles and put about 1 1 1/2 cups in but only add to the last 5 minutes of cooking or else your noodles will get really soggy. 

Right before serving add 1 tbsp of parsley flakes and stir. Total cooking time is roughly 3-4 hours on high. Enjoy your stew :)

This is my favorite soup to eat on a cold wintery evening :)
